Vegan Yum Yum Stuffed Delicata Squash
When I made my Top 10 Vegan Cookbooks list, I realized I hadn’t broken out the Vegan Yum Yum in awhile. I flipped through the book and planned several dishes for the week, but most of them were skipped in an effort to find effortless dishes to avoid standing in the kitchen for long while I wasn’t feeling well. One I did get around to making, though, was Delicata Squash Stuffed with Cherry Apple Almond Couscous (page 56). Mine was actually delicata squash stuffed with cranberry apple almond quinoa, rather, but same concept. This dish really couldn’t be any simpler, and it’s so quick! While the squash was baking for 3o minutes, I had more than enough time to make the cranberry apple almond quinoa and the agave dijon dressing.
The agave dijon dressing mixed into the quinoa and drizzled over the stuffed squash was right up my alley. My favorite dressing is maple dijon, so agave dijon is right along the same sweetness-and-mustard lines. The squash, dried fruit, apple, quinoa, agave dijon- all of it was a great flavor combination, and I think they’d make a pretty little side dish for the holidays! As for those other Vegan Yum Yum dishes, I’m going to have to think of something because, unfortunately, I became ill right after I purchased all of the groceries. Maybe I’ll make them all tomorrow and throw a practice Thanksgiving or something!
