Vegan Sauerkraut Tempeh Panini
Back in college, for some reason or another, I ended up buying a panini press (probably celebrating student loans). I have to say though, this baby has gotten a lot of use over the years. It’s just more fun to throw your basic lunchtime sandwich on it and have a toasty, melty panini. And who doesn’t love that crisscross grill pattern on their food?! My most recent vegan sandwich creation was really tasty (unless you hate sauerkraut and then it would be awful). On mild oat bread, I piled grilled tempeh, sauerkraut, and vegan mozzarella shreds, and finished it off with a generous spreading of horseradish. Yum!
