Vegan Salt’s Chickpea Coconut Curry

While this weekend was flying by, I had some time to make a couple of tasty meals.  Saturday’s lunch was leftover Chickpea Cutlets, and they were even better the next day.  If you haven’t flipped your Veganomicon to that one yet, I highly recommend it!  Just in case you were concerned I haven’t consumed any non-chickpea dishes in days, I did manage to fit in spaghetti and veggie balls Saturday night.  Since we were about to head out to a graduation party, we wanted to fill up the little man’s tummy so he would be in a good mood!  The vegan veggie balls were something I picked up at Trader Joe’s.   I can’t say I was expecting much from frozen meatball look-alikes, but they were actually really tender and flavorful.

Vegan Meat

I know I said I was putting Vegan Salt’s Chickpea Coconut Curry on my to-make list, but somehow it got bumped to the top.  It looks so tasty!  I even made a special $2 trip to the store for an onion and peas because, despite remembering the coconut milk, I forgot about adding those to the list.  Her recipe was very quick and simple to make, and the spices were some of the first ones I added to my collection when I started building up my pantry, so I think the ingredients are items most at-home cooks have on hand.  I added spices to taste, as her recipe suggests, and it turned out so delicious.  To go with the curry, I steamed a pot of jasmine rice and the scents combined made the kitchen smell divine.

Vegan Rice Recipes

I can’t rave enough about this curry; I highly recommend it.  It’s creamy, flavorful, and has a great amount of heat.  The sweetness of the jasmine rice was a great compliment, and I just love the fragrance of it.  I know it’s not as healthy as brown rice or other grains, but I’m okay with that.  I also picked up a few other less-than-healthy snacks at Trader Joe’s this weekend.  I can’t help it; they have the best vegan junkfood!  I’m good at spacing out the treats over time, but my husband tends to have a strict, “if it’s there, eat it now” policy. Can you behave yourself with treats in the pantry?  Well, I hope everyone had a great weekend.  It’s time for me to catch up on all of your posts in my reader!

  2. Mucho chickpea love to ya! That curry really looks great. I am also a fan of the TJ frozen ‘meatballs’. Great for quicky meals!

      I’m chickpea nuts… 😀 Those meatballs have a nice texture and flavor. I always prepare myself for the worst when I try packaged faux meat products!

    I have been on a chickpea kick lately so maybe I will try either the curry or the cutlets. I’m thinking the curry would be a better choice. 🙂

      They’re both really good! The cutlets were fun to make because I”d yet to made any sort of faux meat with vital wheat gluten, but I made extra of the curry and had it for lunch all week. Have fun! 🙂
