Vegan Rice And Mexican Chipotle “Sausage”
I really love the flavor of Field Roast’s vegan grain sausages, so I picked up the Mexican Chipotle since it’s the only one we hadn’t tried. It warns on the package that it’s hot and spicy, but since we love spicy food I wasn’t too worried about it. After putting on a pot of brown rice to steam, I chopped up a red pepper, an onion, and the Mexican “sausage” and sauteed them in a touch of olive oil until tender. I served up the veggies and sausage over a plate of brown rice. Okay, I admit the sausage is really spicy. It wasn’t unbearably so for us (I may have had a couple water refills), but too much for my son so I whipped him up something else instead. I wouldn’t say the Mexican Chipotle is my favorite of the Field Roast sausage flavors, but it’s definitely tasty and would be great in tacos or a spicy casserole, as well.
