Vegan Peppermint Stick Ice Cream

Nothing says holidays like a bag of candy canes and a hammer, does it?  Sure, peppermint pieces can be found, but I can’t think of any reason to go looking for them when I have a perfectly good excuse to use a hammer to break things!  When I was younger, we stalked the ice cream isle, impatiently awaiting the peppermint stick “special edition” ice cream to hit the shelves.  I’ve never been a huge peppermint lover, but when it comes to peppermint ice cream… well, that’s like frozen Christmas in a tub right there.  After waiting, once again impatiently, for one of my favorite vegan ice cream companies to release a peppermint stick holiday flavor, I say it’s time to stop waiting and start making!

Vegan Ice Cream Recipes

Vegan Peppermint Ice Cream

  • 1 14 ounce can regular coconut milk
  • 1 1/4 cups nondairy milk
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 3/4 teaspoon peppermint extract (optional)
  • 1 cup crushed candy canes or small peppermint stick pieces

In a large bowl, combine coconut milk, nondairy milk, sugar, vanilla extract, and peppermint extract (for a more peppermint-y ice cream, rather than vanilla with peppermint sticks).  Refrigerate batter for at least 2 hours.  Once batter is chilled, make according to your ice cream maker‘s instructions.  Add in peppermint pieces 5 minutes before your machine’s freezing cycle is finished and process.  Enjoy!

      Thank you! :) Just a tip, it’s good and all at first- but after it’s been in the freezer for a few days it’s fantastic!

      I’m guessing most 16 year olds don’t. ;) When I went to college the toaster was my only appliance (other than those bolted down to the apartment).

    Oh my gosh, I haven’t thought about peppermint stick ice cream in a few years, but it used to be one of my all-time favorite flavors! You just brought back a whole bunch o’ nostalgia. This looks amazing! I need to get me an ice cream maker…!

      Ask friends or family if they have one they don’t use. I find, like breadmakers, those get pushed to the back of pantries or stored away in the basement and a lot of times you’ll find someone more than willing to give it to you! :)

    I am definitely making this. I have an ice cream maker with a built in compressor that is automatic and I have barely used it. Time to dust it off and make some vegan ice cream. It’s the one thing that I don’t eat anymore that I truly miss. Thanks for sharing your recipe.

      Wow, fancy! :) It’s good right away, but after mine had been stored in the freezer for 2 days or so, it was perrfect because those mint bits started to soften up and blend like the store variety!

    I go crazy for the kind like this, but also with big, thick, dark chocolate curls that go “snap” when you bite them…. wonder how to make those…

      Like the curls on top of chocolate silk pies and such? Hmm.. I think you could just make them by thickly shaving a chunk of vegan chocolate?

I say to you, I definitely get irked at the same time as other folks think about concerns that they just don’t recognize about.
