Vegan Peanut Butter And Mexican Snickerdoodle Cookies Invade My Cookie Jar

Two more down… a lot to go… Last week, I made two more vegan cookie recipes from Vegan Cookies Invade Your Cookie Jar to share with my little class.  I chose to make Peanut Butter Crisscrosses (page 81) first, because I thought a simple peanut butter cookie would be well-received, and I wanted to have them in case I didn’t find time to make a second kind of cookie.  A mix between a typical peanut butter cookie and a shortbread cookie, the peanut butter crisscrosses are tender, flavorful, and just perfect!

For my second batch of cookies, I made Vegan Cookies Invade Your Cookie Jar‘s Mexican Chocolate Snickerdoodles (page 89).  I probably shouldn’t have mentioned they were chocolate cookies with a touch of cayenne, because I’m not so sure my classmates were very interested in them after that.  I guess these types of recipes are more for foodies like me?  Luckily, the husband, the little man, and I loved them and had no problems finishing up the leftovers!  They were chocolaty and sugary with just a slight kick of cayenne to finish.  If my little man liked them, and you all know how much he can’t handle spicy heat, anyone would!  They reminded me of the aztec hot chocolate recipe from Speed Vegan in cookie form.

    I stick with classic chocolate chip cookies when I bring cookies to people I do not know well. They are always well recieved. Those are my favorite PB cookies but I use crunchy peanut butter instead of smooth. Even my picky eat brother likes them. I can’t wait to see what other cookies you will bake. It would be awesome if you baked every cookie in the book. It may take a year but it would still be fun.

      Yeah, chocolate chip are the best! I think it would be fun to make a whole post of VCTOYCJ photos. I’m such a food nerd! 😉

    Those PB cookies look just like the ones my mom used to make 🙂 It can be a problem bringing PB cookies around with the whole peanut allergy thing.

      Good point, I hadn’t even thought of the peanut allergy thing. I guess since no one mentioned it, knowing we were taking turns with snacks, I didn’t even think of it.

    i saw the recipe for those mexican cookies and i want to gluten-free them. if i do, i’ll post. glad you liked them. i might have to take out the pepper.

  4. My favorite cookies to make for others are simply peanut butter chocolate chip. I am still learning when it comes to baking or even cooking, so i keep it simple.

    I just had these today and they were all sorts of awesome! I hate regular snickerdoodles, but these were amazing!
