Vegan Peach Crumble, Sloppy Jonis, And Aztec Hot Chocolate
The other night, I was asking around for a great vegan peach cobbler recipe, but came up empty handed. I decided to make a quick little vegan peach crumble of my own design while I waited around for a perfect tried-and-true cobbler recipe to come along. I skipped coating my fresh peaches in sugar, because I love the natural sweetness of fruit, and simply made a buttery oat topping to crown them. Of course, you could always toss yours in 1/4 cup sugar if you prefer your desserts to be sweeter.

Ingredients:
- 4 large peaches, sliced
- 3/4 cup quick oats
- 1/4 cup vegan butter, melted
- 1/4 cup brown sugar
- 3/4 teaspoon pumpkin pie spice
- 1/2 teaspoon baking powder
- pinch sea salt
Preheat oven to 375 degrees. Place peaches in a 2.5 quart oven-safe dish. In a medium bowl, add melted butter, quick oats, brown sugar, pumpkin pie spice, baking powder, and sea salt and gently stir until well-combined. Distribute oat mixture evenly over fresh peaches. Bake for 34-36 minutes or until oat crumble topping is browned. Enjoy!


Yesterday, I tested out a recipe from Hearty Vegan for Sloppy Jonis. These were by far the best “sloppy joes” I’ve ever tasted! Far better than a boxed mix, that’s for sure.


I whipped up the Aztec Hot Chocolate from Speed Vegan yesterday evening. Yeah, it’s like 100 degrees outside, but hot cocoa with cayenne? I’m all over that! The cocoa was delicious- rich, sweet, and definitely spicy. I can’t wait to make this my new holiday hot chocolate.

These look great Keri I’m hoping to try making my own peach crumble (almost said peace crumble lol) but instead using either tinned or fresh peaches sprinlke about a tablespoon of cornflour on top of the peaches and topping of with granola and maybe mixed seeds. I’ll let you know how it turns out when I make it (like you I prefer to make dishes less sweet by using less sugar or using a sweetner guess it comes from years of baking for a diabetic)

It all looks great. I know I have said it before but the Hearty Vegan cook book sounds like an awesome book to have. It is definitely one I will buy when it comes out. Hot chocolate is good anytime of the year.
