Vegan Jalapeño Tofu Scramble

For me, this scramble makes for the perfect vegan breakfast, but I’m also a big fan of “breakfast” meals for lunch or dinner too! (Oh yeah and breakfast!)  I made this tasty dish because I had a package of soft tofu that I needed to use and I wasn’t sure what to do with it.  In the past I have only purchased firm tofu or silken tofu so I wasn’t exactly sure of the texture for recipe planning without opening the package.  Most of the recipes I had come across for scrambles called for firm tofu, and I didn’t want to waste the soft in a failed recipe attempt.  After a brief discussion with OrdinaryVeg on Twitter, I decided to go for it. Luckily, jalapeño scramble turned out so delicious! I served it with a side of whole wheat toast topped of with hot pepper peach spread.

Vegan Breakfast Recipes

Ingredients:

  • 14 oz package soft tofu
  • 1 1/2  tablespoons olive oil
  • 1 fresh jalapeño, chopped
  • 2 tablespoons nutritional yeast
  • 1 tablespoon vegan butter
  • 1 tablespoon soy sauce
  • 1/2 teaspoon garlic powder
  • sea salt to taste
  • black pepper to taste

In a large skillet, heat olive oil and saute jalapeño until tender.  Add soft tofu to skillet and crumble with spatula.  Once crumbled add in vegan butter, nutritional yeast, soy sauce, salt and garlic powder.  Mix well and continue cooking until lightly browned.  Top off with salsa, if desired, for extra flavor.  Enjoy!
