Vegan Hearty Lentil Stew

When I was planning tonight’s dinner I knew exactly what I had on hand and it just seemed like one of those days where I was missing some vital ingredient from every recipe I wanted to try.  I decided to take the “throw what you have in a crock pot and call it vegan stew approach and to my surprise (and luck) it was absolutely delicious!  Just throw whatever you have in the pot, because after all, I’m pretty sure that’s what “stew” is in the first place.  I bet even some steamed greens in the mix would be delicious!   This is a meal that will definitely please everyone, especially on a cold, grey evening.

Vegan Stew


  • 4 cups water
  • 3-4 “chicken” vegan bouillon cubes
  • 2 cups green lentils
  • 2 tablespoons vegan butter
  • 1 large white onion, diced
  • 1 stalk of celery, chopped
  • 1 cup baby carrots, sliced
  • 3 cloves of garlic, minced
  • 1 tablespoon basil
  • 1 teaspoon sage
  • 2 teaspoons sea salt
  • 1 teaspoon black pepper

Melt butter in a medium pan and saute onions, celery, and garlic until softened.  In crockpot, mix water, bouillon, lentils, carrots, basil, sage, sea salt, and black pepper.  Add in sauteed onion, celery, and garlic.  Allow stew to cook on the low setting for 6-7 hours.  Enjoy!

    Thank you- I definitely will! 🙂 You definitely don’t have to be a vegan to make stuff like this – its super yummy. In fact, posting about my meals sometimes makes me want to go warm up some left overs!
