Vegan Garlic-Butter Soba

This dish was exactly what I needed to revive me after a long day;  I’m not sure what it was, but I just wasn’t feeling as “Keri” this afternoon as I prefer, so I was really looking for some delicious comfort food.  To accompany my vegan pasta meal, I made a loaf of Rosemary Bread, except traded out the bread flour for whole wheat flour, took out the brown rice syrup, and added a tablespoon of vegan butter. The result was a slightly flatter, and I admit less attractive, delicious loaf of herb bread.  There’s no need for a side dish with this satisfying dish, but we did follow up with a “dessert” of some leftover Broccoli Slaw.

Vegan Pasta Recipes


  • 8 oz. package soba, prepared
  • 1 cup carrots, chopped
  • 1/2 cup snap peas
  • 2 cups broccoli
  • 1 small white onion, chopped
  • 4 cloves of garlic, chopped
  • 1 tablespoon olive oil
  • 1 1/2 tablespoons vegan butter
  • 2 tablespoons vegan parma
  • 1 teaspoon garlic salt
  • 1/2 teaspoon black pepper

Steam carrots, broccoli, and snap peas until just tender.  In a large, deep skillet, heat olive oil and saute onion and garlic over medium heat until tender.  Add in steamed carrots, broccoli, and snap peas, followed by butter, parma, and noodles.  Toss or gently fold until well combined.  Enjoy!

    Noodles are the ultimate comfort food. Those look delicious! Rosemary bread sounds so great. Do you like your bread machine?

    Thank you, they were really tasty; the toddler was a big fan. 🙂 I love my bread machine. Most people will probably say that they’re unnecessary, but I have so much fun with it. I make all of our bread, and I find myself using it more often than not.
