Vegan Chipotle Yams And Zucchini With Quinoa

I created this spicy vegan recipe over the weekend and we absolutely love it!  It’s the perfect “between seasons” dish while we’re in limbo between summer and fall.  The colors of the vegetables are just so vibrant against the quinoa, and we all know how much I love a pretty meal!  The adobo sauce can bring a pretty intense heat, so you should use less of it if you want to tone down the spice.  Also, I used saigon cinnamon, which is quite a bit stronger than regular, so you may want to add a bit more if yours is milder.  Yum!

Vegan Chipotle Yams And Zucchini With Quinoa

  • 1 cup quinoa
  • 2 cups water
  • 2 yams, peeled, quartered, and sliced
  • 1 teaspoon olive oil
  • 1 medium zucchini, quartered and sliced
  • 1 medium yellow squash, quartered and sliced
  • 2 chipotles in adobo, minced
  • 1 tablespoon adobo sauce from chipotles in adobo
  • 2 teaspoons olive oil
  • 1 1/2 tablespoons agave nectar
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon black pepper
  • big pinch of sea salt

Preheat oven for 425 degrees.  Toss yam pieces in 1 teaspoon olive oil, place on a baking sheet, and roast for 15 minutes or until tender.  Meanwhile, bring water and quinoa to boil in a medium pot.  Reduce heat and simmer covered for 12 minutes or per package instructions.  In a medium pan, heat 2 teaspoons of olive oil and sauté zucchini, yellow squash, and chipotles until zucchini and squash are tender.  Remove from heat and stir in adobo, agave, cinnamon, black pepper, and sea salt.  Serve over plain quinoa or quinoa tossed with a little soy sauce. Enjoy!

    Great post! I’m always looking for more recipes involving Quinoa, just had some today along with some faux meat by Quorn.

    I definitely like spicy. I love it when it makes me sweat! It only becomes to spicy when it BURNS and my eyes start watering and I choke.
