Vegan Carrot Cookies Invade My Cookie Jar

Hold the phones! This is important news!  I have a new favorite vegan cookie recipe from Vegan Cookies Invade Your Cookie Jar.  Phew, I know you were on the edge of your seat.  Carrot Raisin Spice Chewies (page 37) with lemon glaze are now the official I Eat Trees cookie.  Well, I Eat Trees doesn’t have an official cookie, but if it did, these would be the current pick.  Speaking of official cookie, don’t you think states should have an official state cookie?  They have state birds, flowers, trees, and who knows what else, but no baked goods!  Just a thought.  Anyway, don’t let the vegetable content fool you; Carrot Raisin Spice Chewies are the perfect sweet and spice combination, and the tangy lemon glaze just pushes them to the top of cookie perfection.  Cookie. Perfection.

As with all my Vegan Cookies Invade Your Cookie Jar posts, I have to include too many photos.  Each “on the book” photo is getting me one step closer to having a photo like this of every single cookie recipe in the book.  Now that’s going to be a gallery post to remember!  The last photo cracks me up, because the almond visible from the actual book cover cookie is sticking out from the bite, making it look like a little Pacman with a tongue.  Or maybe that’s just what I see.

      The Mexican chocolate cookies are very good, but apparently they “aren’t for everyone”. Haha. I adore this cookbook!
