Vegan Caramel Pecan Bars Invade My Cookie Jar
Okay, not really. If I put these in the cookie jar, no one would ever get their hand out because they’re so gooey and caramely, but absolutely delicious just the same! As you may have read, last Saturday I purchased Vegan Cookies Invade Your Cookie Jar and it’s wasn’t an easy decision which vegan cookies to make first. I guess I could have just gone cookie-making crazy, but while that sounds fun and delicious, I really can’t afford to buy new jeans. After pouring over the pages to decide which recipe I had all of the ingredients to make, I came to Caramel Pecan Bars (page 111). They looked gooey, decadent, and I imaged them tasting something like pecan pie meets mom and pop shop caramel, so how could I resist?
These bars were so much fun to make. You can’t help but smile when you’re working with sticky, gooey ingredients that stick to everything, not to mention the scent of these baking is just unreal delicious. I made the recipe exactly as written and after cooling for the designated 20 minutes, stuck them in the fridge to await their inescapable fate of my belly (oh, and to harden a bit also). Wow, are these heavenly! They’re exactly as I’d imagined, but somehow better. They’re also really, really good salted for a salted caramel treat. If you haven’t already made the Caramel Pecan Bars in your Vegan Cookies Invade Your Cookie Jar, you definitely should. And hey, if you don’t like them I’d be glad to take them off your hands (but I highly doubt I’ll get any offers). Now it comes to decisions, decisions.
