Vegan Brunch Pumpkin Bran Muffins

Oh, Isa, how did you ever think to take a baked good so bland and ordinary as the bran muffin and bedazzle it up with flavors as magical as pumpkin and spice?  I can’t say I’ve ever baked bran muffins, but when I came across the recipe for Pumpkin Bran Muffins (page 167) in Vegan Brunch, I just had to add them to my to-make list.  Sure, anything with the work pumpkin in the title has been making my list this season, but that doesn’t make me any less impressed with this vegan muffin recipe gold.

Vegan Muffin Recipes

Perfect for on-the-go mornings, these muffins take no more than a few minutes of mixing and 20 something minutes baking in the oven before they’re ready to be enjoyed.  And while they’re hanging out in the oven getting hot and fluffy, the muffins-in-training make the kitchen smell divine!  Part of the magic of this recipe is while the batter is very thick and heavy, the muffins somehow turn out light and fluffy.  Must be the work of The Great Pumpkin, Charlie Brown!  Speaking of pumpkin and Vegan Brunch, I had the Pumpkin French Toast (page 101) planned for Sunday morning, but I ended up with a migraine and didn’t get into the kitchen until almost lunch.  I’ll have to find a way to squeeze it in this week, because pumpkin french toast sounds so yummy!
