Vegan Bridal Shower Goodies

Normally I feel like weekends fly by, but this was a long one.  I planned to go get the last few things for my bridal shower baking, but to make a long story short there were car issues and I got stuck at home.  So Friday morning my son and I finally made it to the store.  When I got to start baking, let’s just say it wasn’t my lucky day.  The kitchen was humid and the first batch of cupcakes went flat.  I didn’t want to completely waste them, so I crumbled the cake and froze it for a future trifle.  When I was pulling out an extra bag of sugar from a lower cabinet to start over, I stood up and whacked my head on an overhead cabinet I’d forgotten to shut. To finish out the fun, I managed to step on a large piece of glass (I haven’t broken anything in ages so I have no idea how it got there), and bleed all over the place while hopping around looking for my husband to help me pull it out.  Once I got my wounds bandaged and finished baking, I got to enjoy three and a half hours of sleep before it was time to get up and meet the bride for her practice hair appointment.

Happily, the bad luck ended that night and the shower went so well.  I think everyone had a good time and there were plenty of vegan treats to go around.  The bride’s dad’s wife brought drinks, fresh veggies and the other non-sweet treats so that everyone didn’t go into total sugar shock!  Well, I’m going to go finish chores and finally sit down to relax for awhile before bed.  I’ll leave you with pictures of all of the tasty vegan treats I baked up for the wedding shower.  I hope you all had a great holiday weekend!

    What recipe are the chocolate chip cookies? They look amaaazzzing!!

      I used the one I posted awhile ago- Also, I really feel it helps to refrigerate the remaining dough in between batches. I’ve made them using both the egg replacer mentioned in the recipe or 2 tablespoons ground flax mixed with 6 tablespoons water instead and both turn out great. I actually prefer the flax, but either one is delicious! :)

    Soo you were not kidding about baking all weekend, but everything looks wonderful (aside from all the mishaps). And I have to agree, share up those chocolate chip cookie info!

      My kitchen appliances got their workout. :P I used the recipe I posted awhile ago, but like I said in above comment, I prefer using 2 tablespoons flax mixed with 6 tablespoons water in place of the egg replacer. I actually think I used the egg replacer on this batch though because I was trying to make it as nonvegan flavor friendly as possible…

    wow, keri, all this food seriously is amazing. that’s an over used word. but not for this spread!

      Those caramel bars are insanely good. Very rich probably if you don’t have a sweet tooth (I do!). Thank you so much!

      I made your soft serve ice cream (I think). I have a slow little netbook and it wasn’t letting me scroll through your posts for some reason that night, so I tried to do my best to remember what you used. Whatever it ended up as it was delicious and had the consistency of soft serve so it couldn’t have been too far off… :D Will post about it soon!
