Vegamazing Vegan Ham And Pineapple Pizza
After this crazy-busy month of June is over I’ll stop taking these three day weekends from blogging. I really don’t think my brain can handle a whole three days on hold! I’m not sure what it is about blogging that makes it so hard to get back to, but the first post after a few days is always the hardest, for me at least. Anyway, Friday I made the best vegan ham and pineapple pizza. Ham and pineapple has always been my mom’s favorite, so I had it a lot growing up. And since being vegan hasn’t stopped me from having any of my family favorites, I decided it was time to recreate it. I used my usual crust recipe, sliced a fresh pineapple, and cut up half a package of Lightlife vegan ham. For cheese I combined Daiya cheddar shreds and Follow Your Heart mozzarella. That pie was unreal good. Chris was like, “You should make this for your mom and she’d never know it was veganized.” I’m thinking she would know since she knows were vegan, but I get what he meant.
When I was pulling this fabulous pizza out of the 450 degree oven, I managed to whack my arm on the side and end up with one nasty burn. I took a picture of my injury to show off how clumsy I am, but when I was looking through them I realized it was far too gross looking to share! You’re welcome.
Saturday morning I really wanted to make fresh blueberry muffins. I went hunting for a recipe on VegWeb and came across this one. They turned out looking absolutely amazing, but there just wasn’t much flavor. It didn’t seem to have much more than plain bread and I followed the recipe exactly. If you check out the recipe, let me know what you’d do to make it more flavorful because they had a great muffin top and the texture was perfect!
