Tofuevos Rancheros And Deep Dish Vegan Pizza
Since it’s Saturday I’ll be brief, but I do have a few yummy photos to share. For brunch today, I made tofuevos rancheros from the upcoming Hearty Vegan. This is a dish I’ve seen on a lot of vegan menus, and in fact, Chris ordered a dish of the same title from Handlebar in Chicago. He said this recipe was better, and I have to agree. It still has a lot of heat, but a more pleasant heat, and the tofu was seasoned and mashed rather than the large chunks in the restaurant dish. Don’t get me wrong though, Handlebar rocks!


I spent what felt like a large chunk of time working on dinner, also a Hearty Vegan recipe. I have to say though, this deep dish pizza is more like a work of art than a meal. I was so proud of the presentation! Now if only I’d served it to people who cared about the presentation, rather than my husband and a hungry toddler, but that’s okay; I like to try to impress them too!

This monstrous pizza was filled to the brim with onions, mushrooms, homemade ground pepperoni, homemade vegan mozzarella, and marinara. Oh yeah! And despite it being only a 10 inch pizza, there are plenty of leftovers to go around. I guess this is the kind of pie they’d have to put on the menu in dimensions rather than diameter!

The longest I’ve spent on a meal? It takes me a long time to do very simple things because of my terrible chopping skills. The longest something has taken was probably the time I made gnocchi because it required peeling, cutting, rolling. AH!
Aww, thank you! Trust me- the chopping gets faster. When I first got into cooking as more than a means to survive, meals would take me fooorever because of the chopping. I would resentfully watch Food Network like, “How do they do that?!” But I got quicker and quicker, and now I think I can dice an onion faster than I can measure out a cup of water!

that is one hell of a pizza, my boys would be so excited by that!
I give myself an hour each night to cook dinner for myself and 2 young boys. Somtimes it takes less and sometimes it takes longer. If I feel like cooking I don’t care how long I’m in the kitchen and will just stay there making stuff, but some days I’m glad that I have that hour limit, having to decide what to make every single night and then do it all myself can be a bit much sometimes!
An hour is what I shoot for also. I used to be pretty good at it and now I keep taking longer and longer.
Sometimes I think how nice it would be if my hubs knew his way around the kitchen enough for a meal or two, but oh well! At least I like to cook or we’d be mighty hungry!
Wow, what a pizza! I’m so impressed! I don’t like to spend a lot of time on one meal, but I am willing to spend several hours in the kitchen (usually on Sunday) to prep several meals to last through the week.

I think the longest I’ve spent on a non-holiday meal was probably 2 hours or so. Not because it was involved but because I get distracted easily.
I’m right there with you!!! Everything in life takes me longer because I’m so easily distracted. In fact, I managed to wander off between answering comments on this post. Hahah
That pizza looks out of this world good. It is almost too pretty to eat. You did a great job on the top crust.
I spend about 30 mins on a meal. The longest I have spent on a non-holiday meal is 1 hour. I made an awesome veggie lasagna. It required a lot of chopping and making my sauce from scratch.

The amount of time I spend cooking always changes. Lately, I’ve been soooo lazy and it’s like 10 minutes max lol (which for an all-natural vegan is not a lot! you know)
