Tofu Scramble And Loving Cafe Vegan Restaurant
Admittedly, this weekend is a blur. I mean, all weekends go by too fast, but woah. Friday night we drove to visit my family, stopping first at my grandma’s to make dinner. I made a tofu scramble loaded with sliced portabella mushrooms and fresh spinach. You can’t go wrong with a tofu scramble!
Saturday morning we had a brunch to get to for a beautiful little girl’s 3rd birthday. We ate some fruit salad and vegan sushi and the kids had a great time playing! I guess I forgot to take pictures of our food, but you probably know what vegan sushi looks like, right? Saturday afternoon we went back to visit our favorite vegan restaurant, Loving Cafe. The food is delicious and the whole menu is vegan! I had a spring roll, lo mein, and a tropical smoothie, and my husband had the a spring roll, corn chowder, a panini, and a strawberry smoothie. I could move into this place!
We always get such a kick out of being in an all-vegan restaurant! We browsed the town for awhile, picked up Scrabble Slam and Uno (we’re wild and crazy party people like that) and came home to fresh baked vegan chocolate chip cookies made by Mom. Yeah, I could get used to that!
Today, I didn’t take any pictures! For lunch I made kale and potato enchiladas for everyone, but since I didn’t bring my copy of Veganomicon on the trip and the ingredients in my mom’s kitchen are different than mine, I ended up winging it a bit. They still turned out really yummy; I even took one over to my grandma and she loved it too! Well, I better get our stuff put away from our little weekend trip, but I hope you all had a great weekend too!
