The Vita-Mix Arrival And Vegan Peach Sorbet
It’s HERE! The Vita-Mix actually arrived last night (meaning Amazon got it to me in A DAY!), and I was so excited that I didn’t know what to do with it for right away. I put it in it’s place on the counter between my bad knives (I need new ones, but hey, with a Vita-Mix who needs to cut anything?!) and my KitchenAid stand mixer and just sort of stared at it for awhile. Actually, I’ve had it for a day now and I’m still pretty awestruck by it.
The first thing I had to make was a sorbet. One of the things I was most excited about was making frozen desserts. After getting the notification that the Vita-Mix was arriving, I ran out to the store and got a pound of frozen peaches for the occasion. Since I’m new to the machine, I used the simple sorbet recipe that is in the included cookbook which used just 1 lb. frozen peaches,1 cup rice milk, 1 teaspoon 1/2 teaspoon vanilla extract, and 1/4 cup (I used less) sweetener.
The vegan sorbet was so delicious; we couldn’t believe how quick and easy it was to make, especially on my first attempt using it! Our stupid old blender couldn’t even chop ice! There are so many things I can’t wait to make with nut butters, nut milks, and hummus topping the list. If you have any recipe suggestions for me I would absolutely love them since I’m still unaware of all this baby can do!
