Taco Night Vegan Style
There are lots of different ways to make delicious vegan tacos! Tonight I went with the classic taco seasoned TVP (textured vegetable protein) in whole wheat tortillas with lots of yummy extras.
- 7/8 cup boiling water
- 1 cup TVP
- 1 packet of your favorite taco seasoning
In a bowl, pour the boiling water over the dry TVP. Stir and let sit for 5-10 minutes. I usually chop up my veggies and such during this time. Lightly spray a medium skillet with canola oil. Pour taco seasoning packet and hydrated TVP into skilled and cook over medium heat until thoroughly combined and hot. If you are newly vegan or vegetarian, this will make about the equivalent of one pound of ground meat, for reference.
Once your taco seasoned TVP is done and your veggies and fixings are ready to go, pile the tortillas with goodies and dig in! Tacos are a great way to get a little of every nutrient rich food group into your kids’ (and adults’) bellies with things like lean protein, tomatoes, avocados, lettuce, legumes, and anything else sitting around in the fridge that might not normally sneak its way onto the plate. My whole wheat tortillas housed seasoned TVP, vegetarian refried beans, avocado, tomato, Tofutti sour cream, and Daiya cheddar shreds. Yum!
