Rising Moon Organics Vegan Pasta Meals
While I absolutely love to cook and bake, I do like to have a few convenient meals on hand just in case. I picked up a couple of the Rising Moon filled raviolis, Butternut Squash and Garlic Scallion I believe, at Whole Foods awhile back, and since they were a hit I decided to try these yummy looking Italian dinners. Since I figured that a lot of you are also looking for a few quick vegan meals, I wanted to share these with you. I do want to note that not all Rising Moon products are vegan, so if that is a must in your freezer, be sure to look for the ones with the little “V” on the front.
Since last night it was just my toddler and I, I popped the stuffed shells in the microwave and had our main dish in less than 5 minutes, which I must say was pretty awesome. According to the back of the box one package is a serving, but since we both have rather small mouths (he had one filled shell and I had the other two), it was the perfect amount for me and a two year old. With apple slices and homemade bread on the side, these shells made for a delicious and filling meal! My husband and I shared the lasagna last week and it was SO good also. I will definitely be picking up more Rising Moon vegan pastas. If you check them out let me know what you think!
