Raw Vegan Alfredo Sauce With Shiitake Mushrooms

March 29, 2010 by Keri

I’ve been wanting to make a vegan alfredo sauce for a long time now, so when my Twitter friend Mariesa tweeted about her raw alfredo (you can find her raw recipe blog here), I decided to give it a try!  I wasn’t exactly sure how much of seasoning I wanted to add, so I kept opening the food processor to “test” until it was just right.  I had absolutely no idea how delicious it was going to be, and not only did we eat everything on our plates; we were looking for things to clean the remaining sauce off of them with so not a drop went to waste.  Yep, that good.  For the dish, I used whole wheat penne and dehydrated shiitake mushrooms, using the broth from rehydrated mushrooms in the alfredo.  This sauce is most definitely going to be a staple around here.  I can’t wait to make it for my nonvegan extended family!

  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon sea salt

In food processor combine ingredients until well blended and smooth.  Enjoy!

I love the idea of a raw sauce- they’re so easy to throw together!

I’ve eaten all the sauce off my plate many times. No shame 🙂

These do look cheesylicious, and it sounds so simple! I’m going to have to try this, maybe throw some peas in there! Looks fantastic!

    You’re welcome, BlessedMama! 🙂

Amanda, peas sound good too! Why do I never have peas?! I’ll have to fix that!

I was so surprised at how quick it was, Danielle!! I mean I knew there wasn’t really work involved, but I turned on the food processor and once it was done I was like, oh.. that’s really it! 😀 No shame in plate licking!

Thank you, Averie! I think this was my first raw sauce (to make, I mean) and I have to say it’s an amazing thing!!

Just found your blog and will be coming back often!

    Did you soak the cashews?

Thank you! 🙂 When I made the sauce for this post I soaked them for quite some time, but last night I just soaked them for a couple hours.
