Raw Vegan Alfredo Sauce With Shiitake Mushrooms
I’ve been wanting to make a vegan alfredo sauce for a long time now, so when my Twitter friend Mariesa tweeted about her raw alfredo (you can find her raw recipe blog here), I decided to give it a try! I wasn’t exactly sure how much of seasoning I wanted to add, so I kept opening the food processor to “test” until it was just right. I had absolutely no idea how delicious it was going to be, and not only did we eat everything on our plates; we were looking for things to clean the remaining sauce off of them with so not a drop went to waste. Yep, that good. For the dish, I used whole wheat penne and dehydrated shiitake mushrooms, using the broth from rehydrated mushrooms in the alfredo. This sauce is most definitely going to be a staple around here. I can’t wait to make it for my nonvegan extended family!
- 3/4 cup hot shiitake broth (or hot water)
- 1/2 cup cashews
- 1/4 cup pine nuts
- 2 tablespoons nutritional yeast
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon sea salt
In food processor combine ingredients until well blended and smooth. Enjoy!
