Quick Vegan Veggie Miso Soup

I haven’t been feeling very well for the past few days, and a pot of vegan soup usually seems to do the trick.  It’s really easy to whip up using whatever veggies I happen to have at any given time, and everyone gobbles it up (even if I did make it as get well soup for myself). I love adding miso because it adds so much flavor to the broth and veggies!  For this pot I used onion, kale, and celery, but whatever you have is perfect.  Also, I like my veggie slices rather large, but you could even dice them up if that is what you prefer.

Vegan Soup Recipes


  • 8 cups water (or broth)
  • 4 vegan “beef” bouillon cubes (omit if using broth)
  • 4-5 tablespoons red miso
  • chopped veggies

Saute veggies until tender.  In a stock pot, heat water and dissolved bouillon (or broth).  Once tender, add in veggies, cover, and simmer for 5 minutes.  Stir in miso until dissolved.  Cover pot and simmer for 10 minutes.  Enjoy!
