Potato Casserole And Averie’s Vegan Soft Serve
I’ll start with yesterday’s lunchtime remix, because it was a really tasty one! Over mixed greens, I piled cold leftover fajita casserole, and topped it off with a little salsa. I surrounded the whole delicious mess with tortilla chips for yummy decoration. This vegan fajita salad was as good as, if not better than, the fajita casserole.
On my fajita casserole post, Jenna of Healthy. Happy. Well. mentioned her current favorite, a potato, asparagus, and onion casserole. It sounded good and since I had all the ingredients, I decided to give it a try. This is why you should recommend me dishes, because with my lack of advanced menu planning, chances are it will end up our dinner!
This potato casserole was very simple to prepare, including sliced potatoes, asparagus, onion, vegetable broth, and salt and pepper. I added a package of Gardein beefless tips on top, specifically for the little guy because I knew he’d like them. I wasn’t sure exactly at what temperature to bake the dish; I probably chose wrong and it took close to an hour for the potatoes slices to cook through. It wasn’t a big deal because I had the time, but next time I’ll be sure to up the temperature. Last night, when everything was cleaned and put away, we settled in for a movie and bowls of Averie of Love Veggies and Yoga‘s soft serve ice cream. A quick whirl in the Vita-Mix and we had what tasted like real vanilla soft serve ice cream! I mean, this stuff is sooo good. I can’t wait to try her other flavors, especially peanut butter, which my husband objected to me adding to last night’s batch. The best part is my family loving a dessert I know is good for them. Thanks, Averie! You gave me one more reason to love my Vita-Mix.
I hope everyone is having a great week. I’m a day behind, so I’ll probably post today’s food in the morning. Darn me and my taking a day off. But I did make a really delicious recipe from Eat, Drink, and Be Vegan tonight that I can’t wait to share!
