Our Veggie Kitchen Vegan Chickpea Alfredo
What a beautiful day! It was so lovely, we got out our bikes and went for a ride! It’s so nice to get back outside. When we got home from riding, the husband requested black bean burgers, so I got to making my go-to black bean burgers with the recipe from Veganomicon. I’d forgotten how much I love those burgers!
In other news, I’m really enjoying reading Crazy Sexy Diet. I haven’t gotten the chance to read it in large sections, more like grab a page here and there, but part of me doesn’t want to be finished with it because I’m learning so much! I remember the days I could sit down and read a phone book-sized novel in an afternoon, but now that I have a little one running around, requesting things, and wanting to chat and play, I rarely read more than 5 pages at a time! I’m excited to do the 21-day adventure cleanse when I finish the book, so I’ll definitely be blogging about my experience as well as keeping a personal journal.
Tonight, I have a recipe link to share with you. Last night, I made Chickpea Alfredo from Our Veggie Kitchen and it’s fantastic! I highly recommend this bean-based sauce. Mine was a little thinner than I wanted at first, so I added about 1/4 cup extra cashews. I left out the mushrooms because I didn’t have any, and added a little extra nutritional yeast to taste. I ended up with about 6 cups of sauce, and after mixing it with a pound of rotini, 2 cups green peas, and about a cup of diced Lightlife vegan ham, I still have 3 cups jarred to use another day. Delicious!
Oh, and I forgot to mention, it’s extremely quick and easy to make too. I’m on a roll with these meal-in-a-hurry ideas!
