Obsessed With Roasted Vegetables

You’d think since it’s getting hotter outside, cranking my oven up to 400 and some degrees would be the last think on my mind.  I’ve never claimed to make sense.  Anyway, I’ve been completely obsessed with roasted veggies lately.  Broccoli, roots, green beans, if I can roast it I will.  Tonight, I sliced and roasted 3 large parsnips after tossing them in a small amount of olive oil and a pinch of salt and pepper.  I served those up with gently steamed green beans and lightly seasoned red quinoa.  The meal was simple and delicious!

We were sitting there enjoying our meal, with my son even double-fisting green beans, when I looked over to see his eyelids start to droop.  We tried calling his name and talking to him, but it was a lost battle.  He was out like a light, right there at the dinner table!  So I cleared off the table, cleaned his tray, and went to wipe his face and hands.  Surely that will wake him up, right?  Nope.  Still softly snoring away.  I couldn’t just leave him there!

By this time my husband had left to teach a night class and I’m standing there staring, once the giggles had worn off, trying to figure out what to do.  He’s never been one of those kids you can just pick up and gently move from the car seat to the crib, even as a newborn.  But I gave it a shot anyway, knowing I couldn’t sit at the table for the next 12 hours to watch him sleep.  Yeah, I didn’t think that would work.  It was a rushed bath and pjs trying to cheer him up, but as soon as I set him in the crib he was back asleep immediately.  He’s never gone to bed this early, but I guess on the bright side it’s a couple of extra hours for Mommy to get stuff done!

I’ve been wanting to try a recipe from Vegan Cupcakes Take Over The World, so maybe I’ll do that!  Earlier today while we were outside, I snapped a few shots of our pretty flowers, so I’ll add a couple at the end of my post.  I’m so excited for spring and all of the time we’ve been able to spend outside now that the weather is nice.  Well, I hope you all had a beautiful day as well!  If you’ve been watching Food Revolution, or have just heard about about it and formed an opinion anyway, I suggest stopping over at Veg is Sexy to share your thoughts.

    I don’t think it could ever get too warm for roasted veggies lol. Especially when they’re roasted & then cold…they’re amazing!

      Thank you! 🙂 Hehe, I was so surprised! He’s one of those kids that goes upstairs at 8pm and wants to be put in the crib, asleep before we even close the door. We lucked out there, but he doesn’t nap so I guess that’s my trade off.

    I also love roasted vegetables, so running a hot oven on a warm day is okay with me if I get to eat something tasty when it’s all said and done. 🙂

  5. He is super cute! I wish mine would do that…they are 9 and 11 now! I think those days have passed! He must be going through a growing spurt eating all those veggies and then passing out! Your dinner looks delicious! Roasted veggies and quinoa are one of my favorites!

      Thank you! Yeah, I bet 9 and 11 aren’t falling asleep in the high chair. 🙂 He’s decided he’s done with napping, but from the looks of it he still needs one!

      🙂 When I see parents walking around the mall with sleeping kids draped over their shoulders I’m thinking, he would never fall/stay asleep like that!
