Noodle Soup And Vegan Pizza
I don’t know about you, but I’m so excited to see summer fade into fall. And it seems like it’s happening so quickly! This weekend we were visiting my family and I didn’t pack anything even remotely warm. After a few chilling outings, I ended up at the store purchasing 3 sweatshirts- one men’s, one women’s (okay, I shop in the “junior’s” department…), and one tiny toddler’s.
With the changing seasons, I’ve really been craving soup. This chickenless noodle soup recipe is from Hearty Vegan, but you can see what’s in it from the picture, so make it and make it your own! I finally remembered to ask the release date for the cookbook I’ve been testing and it’s June 2011. Okay, not quite as soon as I was thinking , but it’s so worth the wait.


Dinner was sort of in a hurry, but I made my favorite vegan pizza crust recipe, topped off with sauce, Follow Your Heart mozzarella, onions, sun-dried tomatoes, and spinach.

I baked vanilla cupcakes with cream cheese frosting from Vegan Cupcakes Take Over The World to take to my little class tonight, but I was in such a hurry I didn’t get to take a photo. I’m sure you’ll remember what they look like though from the 100 other times I’ve made them and posted pictures. You can’t go wrong with VCTOTW! I actually skipped a cupcake, though, to save room for another serving of last night’s Sticky Toffee Pudding. It is unreal delicious. Pass up the cupcakes delicious, even.
What dishes do you most associate with fall?


I am nutty about chili. As soon as fall hits every Sunday morning I pull out the crock pot, concoct something and smell it cooking all day….and we eat it late afternoon as lunch/dinner. Can’t wait!
I’m excited about chili too! I’ve never perfected a chili recipe of my own. This year I’m on it!!
I have to say, I’m excited about the end of summer, too. I’m all for a healthy dose of sunshine, but the cool grayness of the last two days is actually pretty refreshing. (I love cool autumn weather!) I am definitely getting back into soup mode (along with stews and warm spices, it’s what I associate with autumn and winter). Chicken-less noodle soup sounds so good right now…mmmm…
I always find autumn so refreshing. And for some reason, I’m at my most creative and thoughtful in the fall. I’d be unstoppable if it weren’t for those darn leaf burners. For me, instant headache.
Pumpkin for sure!
The groceries have been devoid of canned pumpkin (lazy, I know) recently and I am excited, now that it is fall I can finally get some!
And if I can’t find it in cans, then I can find the real thing come October, for sure!
Oh yes! I just got some pumpkin granola last night. I looove pumpkin season!
