Lunchtime Remix: Vegan Taco Salad
Everyone already knows my love for lunchtime leftovers, but this “salad” was just too delicious not to post! Yesterday night we devoured Fresh Tacos Supreme, with a little bit left over from each ingredients (mostly because we ran out of tortillas). So today for lunch, I brought out all of the leftover goodness, as well as a bag of organic blue corn tortilla chips to make one amazing vegan taco salad. It was hardly what comes to mind when you think of salad (rabbit food), but rather a big bowl of tortilla chips, fresh veggies, vegan taco filling, and salsa, topped off with a dollop of vegan sour cream. Love your leftovers!!
