Lunchtime Remix: Vegan Chipotle Pasta And Corn Soup
As you all know, I have a love for leftovers, and today I made lunch entirely out of them! I took some leftover whole wheat penne and mixed in the “sausage” and veggies from last night’s Mexican Chipotle “Sausage” and Rice. To top it all off, I used extra marinara from Monday’s Red and White Cauliflower Bake! Since I had soup that needed to be used as well, I served the vegan pasta up with a side of corn chowder. The natural sweetness of the corn was a great compliment to the spicy chipotle pasta and took the edge out of the heat. I know you’re probably thinking I’m nutty for getting so excited about making meals out of entirely leftovers, but I hate to waste food (well, I hate waste in general, but I especially have a soft spot about food for some reason)!
