Little Man’s Vegan Green Juice
On last night’s post, Amanda mentioned I haven’t been updating everyone enough on the insane power and usefulness of my VitaMix. And that’s so true! It saves me so much time in the kitchen on little things, makes perfect blended juices, smoothies, and sauces, and turns out killer sorbet. Of course, I’m sure I haven’t even scratched the surface of its meaningful existence in my kitchen, but there isn’t a day goes by it isn’t used at least twice. When I’m cooking and baking I use it to save time on things like making powdered sugar and bread crumbs or chopping things I need cut up less than uniformly. But the first concoction my VitaMix whips up every morning is my son’s vegan green juice. We make it around the same time each day and when he’s ready he brings me his cup and requests “Jewsh”. At first he was a little intimidated by the VitaMix’s roar, but he’s gotten used to it and now he gets so excited, his little feet run in place while it’s blending!
- 1 1/2 cup apple juice
- 1 large kale leaf, devained
- 1 large collared green leaf, devained
- 1 large carrot, peeled and sliced
- 2 teaspoons milled flax seeds
- 2 teaspoons wheat germ
- 1 teaspoon vanilla extract
Of course, we don’t really measure anymore. We just throw in what seems about right. The little man doesn’t take his in a martini glass, but this one was for me and it’s slightly more aesthetically pleasing than one of his cups. No matter how many times I wash them, all of his cups have straws dyed green by his green juice addiction. But I think a few green cups are worth knowing my baby (okay, toddler) is loving his greens! No matter how many different blended green juices we try, this is the combination that never fails to gain tot approval. I turn around to clean up the VitaMix and before I can look again, that cup is sucked dry! Yum!
