Kind Vegan Candied Ginger Pears

These candied ginger pears are the second vegan dessert recipe that I’ve tried from Alicia Silverstone’s The Kind Diet (page 279) and they are quite tasty.  They aren’t extremely sweet or rich, which makes them a nice finishing touch to a meal, rather than the belt-unbuckling chocolate cake.  The candied pears have a nice spice to them and the flavor is perfect for a fall menu, but they are a little more time consuming to prepare than an out of the box dessert would be and some of the ingredients aren’t things that everyone has on hand.  If you’re up for a fresh, light, and healthy dessert though, I recommend giving this a try!  (I adapted this dish for 2 pears, so below is my “version”.)

Vegan Dessert Recipes

Ingredients:

  • 1/2 cup almonds
  • 1 tablespoons brown rice syrup
  • 2 large pears, halved with cores scooped out
  • 1 1/2 cups apple juice
  • 1 teaspoon mashed ginger
  • 1/2 teaspoon sea salt
  • 1 tablespoon organic corn starch
  • 1 tablespoon lemon juice, cold
  • 4 tablespoons maple syrup

In a dry skillet, roast whole almonds over medium heat for 5 minutes or until toasted brown.  Transfer to a bowl to cool.  When cool, grind almonds in a food processor, blender, or electric coffee grinder until fine.  Heat rice syrup in a small sauce pan and stir in ground almonds. Remove from sauce pan, set aside.  Place pears in a deep skillet, cut sides up.  Add in apple juice, ginger, and salt.  Cover pan, bring to a boil and reduce heat to medium-low for 7-8 minutes or until pears are soft.  Take the pears from the pan and place them onto a serving plate, saving the liquid in the pan.  Fill the hollows of the pears with the almond mixture.  In a small bowl or cup, mix the corn starch into the cold lemon juice until completely dissolved.  Stir corn starch mixture into the liquid remaining in the pan and heat over medium high for 5 minutes, stirring constantly until mixture thickens.  Pour sauce over pears, and then drizzle pears with maple syrup.  Enjoy!
