Kind Vegan Bok Choy With Ume Vinaigrette
This is the second recipe I’ve tried from Alicia Silverstone’s The Kind Diet, and I’m really loving the new ingredients I picked up after reading the book (umeboshi vinegar for one thing). Alicia’s superhero recipes definitely have a fresh and simple take on meals that I absolutely love. The bok choy recipe I tried tonight can be found on page 265 of The Kind Diet. I was really hoping that she had posted this recipe on her blog, as she did the chocolate peanut butter cups, but no such luck. Super easy to make, this recipe is simply steamed bok choy with equal parts umeboshi vinegar and olive oil drizzled over the top and a finished with a sprinkling of gomashio. Yum!
