I Ate January 2010
First of all, I want to say thank you to each and every one of you that have visited my blog, followed me on Twitter, fanned the site on Facebook. It means so much to me that you’ve supported my first month of blogging on I Eat Trees and I get excited over each and every comment, retweet, picture sent to me of something made based on one of my posts! Thank you, thank you, thank you! It is absolutely thrilling to find people that are as passionate and excited about vegan food and all things vegan as I am because trust me, around my parts the, “I’m a vegan” is followed by a “Huh?” to which I respond, “I don’t eat meat, eggs, or dairy or use anything that includes animal products.” and usually get “(Pause)…so you’re allergic or something?”.
I’ve also come across a few amazing vegan blogs, stores, and resources which I have linked to the right, but I know there are a lot more out there so if you know of an awesome blog, I’d love for you to link it in the comments. Also, I realize there are a lot more awesome vegan shops out there, but since I want to be recommending them from personal experience, I’ve only linked stores that I’ve shopped at and had a positive experience with, so I will continue to add links as I shop.
Now, to the “January in review”. My favorite recipe posted in January definitely would have to be the Hearty Lentil Stew. It was filling, flavorful, and super yummy as leftovers, as well. As far as breads go, my January favorite was (to my surprise) the Rosemary Bread with its buttery, rich flavor that paired perfectly with the fragrant rosemary. Everyone was practically fighting over the last pieces of it. When it comes to sweets for the month, I’m guilty of making the Kind Chocolate Peanut Butter Cups not once, but twice and keeping them in the freezer as a daily sweet treat. I even shared (a little). My long-time favorite sweets are (my) Keri’s Cranberry Chocolate Chip Oatmeal Cookies. They’re always requested around here so I make them quite often, but I seem to exhibit more self-control with the cookies than those naughty peanut butter cups! I didn’t have very many new finds in January, but I’m really loving my Simply Organic Spice Rack!
