Hummus Burritos, Vegan Fried Rice, And More

I wish that I could say that it was an eventful weekend, but it really wasn’t.  The cold rain kept us inside most of the time (and I could really use some Vitamin D, Mr. Sunshine!).  On Friday we took a little trip to Trader Joe’s (I haven’t been there in awhile) to get our weekly groceries, and I was excited to pick up some of my old Trader Joe’s favorites as well as some new goodies!  I love their baked tofus and affordable organic produce!  What do you love from Trader Joe’s?

Vegan Cheeses

After getting home from shopping on Friday, we settled in to some movies and a bowl of melted Chicago Soy Dairy Nacho Teese.  It had a really pungent processed cheese smell, but it melted really easily and tasted pretty good.  It was even better with a little salsa mixed in! My husband really loved the nacho Teese and said it tasted just like nonvegan varieties of nacho cheese sauce he’d had in the past.  Now, if I can just figure out how to sneak melted nacho Teese into the movie theater with a bag of organic corn chips, we’ll be set.  I should probably invent a plastic lined snack bag that looks like a handbag on the outside!

Vegan Taco Recipes

On Saturday I made some really tasty whole wheat tortillas filled with hummus, pinto beans, vegan sour cream, salsa, and melted cheddar Daiya shreds.  In fact, they were so good that we had them again for lunch yesterday!  I don’t think I’ve been doing a very good job of hiding my burrito obsession lately, but you all still love me, right?

Vegan Rice Recipes

We finished off the weekend last night with a dinner of tofu fried rice made  by chopping up and adding Trader Joe’s savory baked tofu to a bag of their frozen vegan fried rice.  It was absolutely delicious and the perfect “lazy” meal since I had a headache and didn’t feel like spending an hour in the kitchen! I also had “dessert” of a spoonful of organic natural peanut butter.  I’m not sure why, but ever since I was little I have craved peanut butter when I get a headache.  I actually had someone else on Twitter tell me they have the same headache craving! Anyone else??  Anyway, strange peanut butter headache cravings aside, I hope you all had a great weekend filled with plenty of awesome vegan food!

  5. I WISH we had Trader Joe’s in Kansas. I go everytime I visit St. Louis and stock up. I’ve e-mailed them so many times to ask them to build one here!

    Andria- I love that baked tofu so much that I could put it in anything, but I especially love it cubed into brown rice… I probably should have gotten more than two packages!

    Amy- Aww, I’m sorry. “Ours” is about 40 minutes away, so we don’t go often. But we actually don’t really have any shopping locally… other than Walmart.
