Happy Herbivore Vegan Mac N’ Cheese
Tonight I was feeling like making a vegan pasta recipe from one of my favorite blogs, so I went browsing. When I came across Happy Herbivore’s Soy-Free Vegan Mac N’ Cheese recipe, I was sold. I’ve only made vegan baked-style macaroni and cheese, never one with a cheese sauce, so I was excited to give it a shot. I doubled the recipe, but made it exactly to Happy Herbivore’s directions except with one change mistake.
It turns out that I have a red miso paste in a yellow tub and a yellow miso paste in a red tub (I’m pretty sure the company did it on purpose just to mess with me!). So as you can imagine from my mini packaging complaint session, I grabbed the red miso instead of the yellow. Despite the switch, this macaroni and cheese turned out smooth, creamy, and absolutely delicious! I added in the cauliflower I had been steaming as a side dish so that it would be covered in the “cheesy” goodness as well and the whole family loved it! Yum!
