Grapefruit Icebox Cookies Invade My Vegan Cookie Jar

The time had come to make another glorious recipe from Vegan Cookies Invade Your Cookie Jar.  But which one to choose??  Okay, I’m just being dramatic; I actually knew which one I was going to make because I’d purchased a big, honkin’ grapefruit for just the occasion. Not only are these Frosted Grapefruit Icebox Cookies (page 201) cookies amazing, they helped me to realize a new life goal.  But more on that later.  I combined the dough ingredients, rolled the dough in paper, and stuck it in the fridge to stiffen for a few hours.  After the wait, I took out an unnecessarily huge knife and sliced up the square log.

Vegan Cookie Recipes

Putting the cookie log slices on a cookie sheet, I stuck them in the oven, taking to making the glaze while they baked.  I didn’t have any powdered sugar, so I used the vegan powdered sugar trick, this time using my Vita-Mix rather than coffee grinder, and I have to say the coffee grinder did just as well.  But I could make a larger quantity in the Vita-Mix, so I’ll most likely stick with that.  Warning, these cookies smell really tasty while baking!  When they were done baking, I had to wait again while they cooled enough to glaze.  Patience, patience, patience, COOKIES!

After glazing, the recipe instructs to wait again while the icing sets.  Alright, now this is just crazy talk; I was going to eat one of those forbidden undried icing cookies, darn it!  And so I did.  Guess I showed that recipe who was boss, eh?!  Anyway, these grapefruit icebox cookies are seriously divine.  If I didn’t know it was grapefruit, I probably would have guessed they were some sort of glazed lemon shortbread cookie, but delicious none the less.  And now on to my life goal realized.

I want to make all of the cookies in VCIYCJ and take a picture of them in the place of the chocolate almond cookie on the cover.  Yep, that’s really it.  Woah. Dream big, Keri, I know.  But it’s fun!  Obviously, I’m not going to bake them all in the same week, month, maybe even year, because I have no desire to be 200 lbs, but hey, how many of us can say we’ve tried every single recipe in any given cookbook?  I know I haven’t!  Looks like someone is going to be bringing vegan cookies to every gathering and event.

    Haha, that’s a great goal! Just make sure you get perfect pics of each cookie on the cover! I would take a standard picture of the book just straight on the cover, but that’s a sweet pic too. And the cookies look glorious. I don’t think I could have restrained myself from not eating any of the cookie dough!

  5. All of the cookies in this book are so awesome!! As you know, I love the Mocha Mamas. I made the Cowboy Cookies the other day & they are SO GREAT!!! Also, the Espresso Brownies are fantastic (fudgy on the inside & crispy/crackly on the top).

    Don’t worry – I’ve been giving away a lot of these creations. I don’t have a desire to be 500 lbs, either… But I sure have a desire to bake! I need to try these Grapefruit Cookies.

      Oh, thank you for the recommendations! Yum! Yeah, I love baking for holiday gifts and getting personalized reusable tins or containers to gift them in, so this will be perfect! :)

  6. I dont have that book. Probably a good thing :)
    Do they really contain grapefruit b/c i have 2 huge ones i need to use up that i dont desire to eat…but cookies, yeah, im in.

    Love that you guys dont get flack for your choices and that you roll with the, this is the way it is, take it or leave it, but it just is. Mentality. Wish more ppl operated that way :)

      Yeah, I should really stop because my will power surpasses my husband’s… It’s nice to just give people cookies for no reason though! :)
