Fresh Vegan Tacos Supreme
Tacos, again?! No, seriously, but these are amazing! If I’m making TVP for vegan tacos I usually just use plain and add seasonings, but when I saw this already taco-seasoned TVP from Fantastic World Foods, I decided to give it a shot. Wow! This taco filling has amazing flavor and is literally ready in minutes on the stove top, making me a big fan.
I also used my pressure cooker to make a pot of pinto beans for another filling for these super-yummy, super-stuffed tacos. Since it was such a warm, sunny day, I was thinking raw veggie toppings like fresh kale, tomato, and onion sounded refreshing. I even had plans to top these off with Daiya cheddar shreds and then completely forgot! Even without the cheese these turned out so delicious, filling, and refreshing. Yum!
- 6 whole wheat tortillas
- 1 box Fantastic World Foods Taco Filling, prepared
- 1 cup pinto beans, prepared
- 1 cup kale, chopped
- 1 cup grape tomatoes, halved
- 1/2 small white onion, chopped
- 1/2 cup vegan cheddar shreds
