Fajitas And A Vegan Heap Of Dessert
Fajita night! What’s better than tasty stuff piled in a whole wheat tortilla? I don’t know either. For dinner I cooked black beans and brown rice, smashed pinto beans, sautéed red peppers, green peppers, and onions. I also thawed some Daiya cheddar shreds (I keep some frozen) and broke out the salsa. They were so good; I love sautéed onions and peppers. Luckily for a leftover lover like me, there is plenty left for lunches this week. Maybe I’ll even have a vegan fajita salad. Yum!
For a vegan dessert, I made a delicious chocolate raspberry trifle, which I thought my husband called a heap of dessert. It turns out he said he wanted a heap of dessert, but since it does sort of look that way I decided I’d go with it. First I baked the basic vanilla cake recipe from Vegan Cupcakes Take Over The World, allowed it to cool, and crumbled half into a large bowl. I then layered in raspberries, followed by the remaining cake and topped off with chocolate ganache, recipe also from VCTOTW.
Even though I may have managed to drip chocolate everywhere while trying to do too many things at once, this dessert was rich and delicious. I happened to get tackled by a chocolate coated toddler who also enjoyed the treat. Luckily, chocolate isn’t too tough to get out of clothes! Before I started my post, I took a look at my reader and Jessica, The Domestic Vegan, included a link in her post everyone should read. I hope she doesn’t mind me posting the link as well, but with spending yesterday honoring our own mothers, I think it’s appropriate to take a look at dairy from this perspective.
