Ezekiel Vegan Bread And Coconut Water

I don’t know if other people are this way or if I’m just part squirrel, but come spring and summer time, I’m hungry.  I can go all winter sustaining myself on nuts and twigs without much appetite, but when it starts to warm up I can eat everything (vegan) in sight without a second thought.  I’m not sure why, but I’ve always been this way.   Anyway, this morning my son and I shared a piece of Ezekiel cinnamon raisin toast.  I’ve eyed this stuff on many of your blogs, but being a bread maker rather than a bread buyer, I’d never actually tried it.  Yum!  It’s delicious vegan bread and if I didn’t love to bake my own so much, Ezekiel breads would be on my weekly list, but for now they’ll probably just be an occasional treat.

My new obsession (yes, since last night) is coconut water.  I was so excited to try it and luckily it didn’t disappoint.  I’ve never liked my beverages to be very sweet, shunning sodas, lemonades, even fruit juices ever since I was a kid, so coconut water is a perfect treat with just enough flavor and yet not too much sweetness.  Do they sell huge jugs of the stuff? I hear it’s really good for you too; something about more potassium than bananas caught my eye as I was chugging.  The carton instructed me not to tell the monkeys…

For lunch I finally got my salad!  I was craving greens all weekend, but nothing on hand satisfied my leafy desires.  Today, I made a big plate of romaine and arugula with avocado, tomato, and poppy seed dressing.  I’ve about decided I could eat nothing but salad for the rest of the summer, but that’s the last thing anyone wants to hear from a rabbit-food loving vegan, so I’ll be sure to throw some other dishes in the mix as well.

Well, I think that’s all for now.  I have a charity event to attend tonight where I’m certain there will be nothing available that I would choose to consume, so I’m going to have to get creative with my handbag snacks.  These things run pretty late and I’d hate to have to come home grumpy from hunger.  No one likes a hungry Keri.  Anyway, hope you’re having a great day!

    That dressing looks awesome. I’m kind of the opposite with hunger; I crave warm, filling comfort foods in the winter and kind of lost my appetite when spring and summer roll around. Diff’rent strokes, I guess 😉
