Eat, Drink, And Be Vegan Burgers And Potato Squashers
I should start off by saying, these Spicoli Burgers (page 145) from Eat, Drink, and Be Vegan are hands down the best vegan burgers I have ever made. Don’t get me wrong, I adore Veganomicon‘s Black Bean Burgers, but these are just extraordinary! The Spicoli Burgers are rice and hemp seed based burgers, with red pepper, onion, and seasonings. They’re very easy to make- just a whirl in the food processor and pan-fry- just mind the 30 minute chill time the dough requires to firm up when you’re planning to make them. These are delicious with any toppings or naked, on a bun or bunless, but I tried one of the leftover burgers on whole wheat toast with a generous helping of Vegan Brunch‘s Garden Herb Spread and it was out-of-this-world amazing! The flavors were just perfect together.

Per the suggestion in Eat, Drink, and Be Vegan, I made Potato Squashers (page 162) to go alongside our burgers. They’re so much fun and couldn’t possibly easier to make! They do take a lot of oven time, but if you have the time, these are fantastic. There’s no prep outside of stabbing some potatoes with a fork! My husband walked in and saw me doing the smashing and asked if I was making “mashed potato smiley faces”. I have no idea if those are vegan, because I don’t buy them, but these are the same basic idea and a lot cheaper (and probably healthier). Plus, kids love these!!

when i bake potatos, i normally throw the smaller ones from the bag in the oven too. the next day, i have nice little taters, all ready to smash and bake!

I really like the incrediburgers from American Vegan Kitchen. However, I have been eyeing those spicoli burgers forever and now I will have to make them!

These ARE the best burgers!! My boyfriend almost passed out when tasting them because he loved them so much. Haha. They’re super delicious! And you know those potato squashers are pretty much my favorite thing ever.
Hahaha – “Almost passed out.” Now that’s good! The squashers are perfect. I’m making those like everyday.
I frequently make up my own burger recipes with whatever is in the house. I plan to write down a rough idea of how I do it in an upcoming blog post. Those look good!
