Crimson Velveteen Vegan Cupcakes Take Over The World

Last night, I made my first batch of cupcakes from Vegan Cupcakes Take Over The World.  It was a tough decision, but I decided to start with the Crimson Velveteen Cupcakes (page 55) because while I’ve had a few bad ones, I love a good red velvet cupcake. They turned out a beautiful chocolaty red shade, visibly fluffy and moist.  To top these red velvet gems, I chose to make the Vegan Cream Cheese Frosting (page 158).  Wow, that stuff is good.  I probably could have sat down with the bowl of frosting and a spoon, but that would have resulted in one mega intense tummy ache!

Vegan Cupcake Recipes

Alright, so from this slapped-on frosting job you’d never guess I used to work in a bakery and decoratively frost hundreds of cupcakes a day, but it was getting late, I didn’t feel like washing my pastry bag, and admittedly, I was getting anxious to eat one!  So since they were for our own personal consumption, I decided to use the good ol’ plop it on with a spatula method of frosting. Finally, time to inhale sample the goods!  These cupcakes are absolutely amazing.  The cake is so moist and fluffy, and the frosting so rich and creamy.  I can’t wait to impress the nonvegans in my life with these!  Now the only question is, which cupcake recipe should I try next?

    mmmmm so good!! I made some of those cupcakes last June, and I must say, they were better than any other “traditional” cupcake i’ve had in the past.

    Now you’re making me want to buy that cookbook! The frosting does look good 😀 (that’s why I mostly like cake…it only serves as a medium for the frosting!)

      I think I agree. I’ve never been much of a cake person, but I love frosting. Soft, thick frosted cookies are my faaaavorite.

    Ahhh those look awesome! That really is the best cookbook ever created. I love the pumpkin chocolate chip cupcakes, and I’ve also made them subbed with sweet potato! They are awesome. One of my first blog posts AND my standard VIS photo!

    no way!! that’s pretty cool! do you ever tire of eating sweets and smelling frosting and delish food all day? I would surmise: NO! Well, I wouldnt 🙂

      We weren’t actually allowed to eat the stuff unless we went to one of the stores and bought it- go figure. Haha. The place smelled amazing and you could tell what time it was by the scents- doughnuts, bagels, breads, cakes, cookies. The only downsides were I had to be there at 3am and it was a 45 min drive (my shift was 3am-3pm or 4am-4pm depending on the holidays, etc.), and my hand and wrists would hurt really bad by the end of the day from working the pastry bag. Oh! And I worked there summers during college and with all those ovens going it would get so HOT!

        That’s awesome that you worked in a bakery! I just found your blog so I don’t know if you are a baker of sorts already, but did you already have experience before you worked there? I’m 15 and I’ve been really interested in everything baking for the past few months and I want to see if I can make up a few recipes and maybe start some kind of a home ‘catering’ business (not too serious though – something more like a job like doing a paper route or babysitting).
        I still have to bake out of my copy of VCTOTW. My birthday’s coming up though so I may just have to crack it open soon!

          No, I didn’t really have any experience before I worked there other than baking with my mom. That’s awesome that you want to get into monetizing your love of baking! I much prefer home baking to mass baking. When your ingredients come in buckets it loses something for me- haha! I still love baking and decorating cakes, cupcakes and cookies for events/parties. 🙂

    I have that cookbook and love love love everything in it.. haven’t tried the velvet though:-) My friend got it for me as a gift. She and I both had made several different flavors and not dissapointed once. Pumpkin Spice was Awesome in the fall.

    BUT alas, I’m eating more Raw now, so I don’t bake like I used to. When I need cupcakes though, those red velvet ones will be my friend.

      I definitely can’t wait to try more of the recipes, but I’m trying to space them out so that I don’t just binge on sugar for a month. 😛 Pumpkin sounds divine though!

  9. These look so good! I tried the red velvet recipe from Babycakes and I have to say I was disappointed. I have this recipe too but was too scared to try it after the Babycakes disaster. Maybe I should reconsider….;)

      You should! 🙂 I was worried my husband wouldn’t like them because he’s not a chocolate cake fan and red velvet has a chocolate flavor, but he loved them!

    They look so amazingly yum! I made the pineapple cupcakes, they were SO GOOD! And to say they were the first cupcakes I made from the book, things can only get better :’)
