Classic Vegan Mashed Potatoes

March 18, 2010 by Keri

I’ve always loved mashed potatoes.  In fact, it’s always been one of those things that people know about me; Keri loves mashed potatoes and iced tea.  Woah, I’ll try not to make myself sound too exciting here.  Anyway, my grandma has always made the best mashed potatoes, and she still does, but since I live a few hours from grandma’s mashed potatoes I have to make my own.  I love to top them off with Leahey Gardens No-Beef Brown Gravy.  When in doubt, mashed potatoes make the perfect vegan side dish to anything!

Vegan Side Dish Recipes

Ingredients:

  • 10 medium red potatoes, peeled and quartered
  • 1/2 cup non-dairy milk
  • 2 tablespoons vegan cream cheese
  • 1 tablespoon vegan butter
  • 1 teaspoon sea salt
  • 1/2 teaspoon garlic powder

Boil potato pieces until tender.  In a large bowl or stand mixer, combine ingredients and whip until fluffy.  Enjoy!

Dare I say…I haven’t had mashed potatoes in years?! Uhh…this needs to be fixed pronto 🙂

I wish I lived at your house! Looks like you always have really delicious meals. Since I live alone I rarely cook, but I did make vegan mac & cheese with asparagus last night so thankfully I have that for leftovers tonight

Aww, thank you! When I lived alone in college I didn’t always cook for my cat and I, but when I did he was always a fan. 😀 Vegan mac and cheese with asparagus sounds delicious and I love leftovers. Yum!

  4. Yikes, that’s a lot of fat. 😮 I’ve never heard of cream cheese in mashed potatoes. I think mashed potatoes taste great and don’t need much fat, maybe 1 tbsp of margarine or so. I also add a little nutmeg, because all potato dishes need a little nutmeg.

Danielle- Oh no, you better do that for breakfast! 😉

Maija- I guess they’ll have to be our dessert potatoes then. 😉
