Classic Vegan Mashed Potatoes
I’ve always loved mashed potatoes. In fact, it’s always been one of those things that people know about me; Keri loves mashed potatoes and iced tea. Woah, I’ll try not to make myself sound too exciting here. Anyway, my grandma has always made the best mashed potatoes, and she still does, but since I live a few hours from grandma’s mashed potatoes I have to make my own. I love to top them off with Leahey Gardens No-Beef Brown Gravy. When in doubt, mashed potatoes make the perfect vegan side dish to anything!
- 10 medium red potatoes, peeled and quartered
- 1/2 cup non-dairy milk
- 2 tablespoons vegan cream cheese
- 1 tablespoon vegan butter
- 1 teaspoon sea salt
- 1/2 teaspoon garlic powder
Boil potato pieces until tender. In a large bowl or stand mixer, combine ingredients and whip until fluffy. Enjoy!
