Chocolate-Covered Katie’s Raw Vegan Macaroons
When I worked in a bakery in college, the only goodies that I truly coveted were the macaroons. I didn’t even think that I liked coconut until I met the macaroon! I honestly haven’t had a macaroon in years, probably at least 6 years, and when I saw this recipe for the raw vegan cookies on Chocolate-Covered Katie’s blog, I knew it was time. The only problem was that I didn’t have a food processor (Gasp, I know!). Luckily, I just picked up a Ninja Master Prep; Okay, maybe I got the Ninja mostly because I’ve been longing to make Katie’s recipes, but I know I’ll use it for a million other things too!
I can’t believe how quick and easy it is to make these raw macaroons! The only necessary ingredients are dates and coconut butter. Of course, if you want to more ingredients, she gives suggestions for extras. I chose to add about a tablespoon of ground almond and a tablespoon of unsweetened shredded coconut to the mix. The first thing I did after the “dough” was well mixed was have a taste and oh my goodness are these delicious! After forming the “dough” into balls and rolling them in more shredded coconut, I placed them in the freezer to store for an after dinner treat (if my self-control holds). While I was rolling them, I was thinking how I would love to walk into a party with these or gift them because they’re so pretty! I can’t wait to try more of Katie’s Fudge Baby recipes!
