BBQ Eggplant Sandwiches And ABC Vegan Cookies
My panini press has been getting a lot of lovin’ lately, like this barbecue grilled eggplant sandwich with grilled onions and spinach on whole wheat vegan bread. I guess that means my cast iron grill pan is getting a lot of love as well! I served our barbecue eggplant sandwiches with steamed acorn squash, one of my lifelong favorite vegetables. Acorn squash is awesome with a little vegan butter and brown sugar or vegan butter and garlic, but it’s delicious (and lower calorie) plain too.


A couple weeks ago, I purchased a few Alternative Baking Company vegan cookies from a coffee shop right next to my eye doctor. I took them with us on our trip to my mom’s for us all to sample. I even took pictures! But somehow, I completely forgot about them and never wrote my little review. This isn’t the first time I’ve had cookies from ABC, and whenever I see the displays around, I’m suckered into buying one just because I think it’s so great to see vegan cookies available at non-vegan places. Ironically, the coffee shop I purchased these at doesn’t even have non-dairy milk options for their coffee, so I’m not sure why they chose to sell them, but the display has been there as long as I can remember!

This time I purchased Ginger Snappin’ Raisin, Snickerdoodle, Double Chocolate Chip, and Coconut Macaroon. The cookies are all plenty big enough to share or save half for later. We loved the Ginger Snappin’ Raisin; it reminded me of my pumpkin ginger cookies. The Double Chocolate Chip was probably my personal favorite because it’s like a big cookie-shaped brownie! The Coconut Macaroon was also very tasty, but the Snickerdoodle was a bit dry. I very much prefer Vegan Cookie’s Invade Your Cookie Jar‘s Snickerdoodles, but maybe I just got a stale one. I should mention my little man loved his little piece of them all, and didn’t really seem to notice the Snickerdoodle being stale. Oh, and we didn’t eat them all in one day…

That panini looks delicious! I haven’t met a vegan sandwich I didn’t like, so it’s hard to pick a favorite. I can never get tired of a good sandwich!

I’ve tried their cookies and they always seem a bit dry to me, but your review makes me want to try them again; they look so appetizing here!
Yeah, I think it really depends on where you buy them. If they don’t sell quickly enough, they sit there and get kind of stale. :-/
I love BLT’s…one rye bread. Huge fan of Bean’s & Barley’s tempeh BLT. They’re in Milwaukee, WI so if anyone’s ever there…go get one!

I love love love the double chocolate one, too! I overdosed on them a couple years ago though so haven’t had one in awhile. I think it might be time.
And I’m seeing that I might need a panini press, too.
Haha- Overdosed on cookies. I must have a higher tolerance because I can OD and then have another cookie the next day…

My favorite sandwich is kind of an odd one. Its banana, avocado, peanut butter, and spinach. I know. I’m a freak. But somehow, the flavors just work for me. It delicious!
I have not tried ABC cookies, i have not had a chance to try them. But i know a store a couple blocks from work that sells them. I know where i’m walking to tomorrow!
You may just want to jab at them with your finger first to make sure they aren’t stale.
Given that most of the cookies are gluten-free, and preservative-free, AND may sit on the shelf or in a vending machine for a while, I think they are really fantastic cookies. They sell them in a vending machine just outside the building where I work–dangerous, considering that 1 cookie has more calories than a meal… my favorite is the “mac the chip” cookie, because it’s full of coconut as well as its title ingredients.

Oh my gosh, I love ABC cookies! I had my boyfriend bring me back 2 of every flavour he could find to HK when he went to the States!! I ended up with 18 cookies, lol! But had to keep them in the fridge so they wouldnt go stale… I also love the Macadamia Coconut, but the Peanut Butter Choc Chip is amazing too!!

ABC Cookies…Pumpkin and Lemon Poppy Seed are my two favs! I’m not vegan but these cookies ROCK! Your eggplant panini sounds delicious!
