Awesome Cucumber Pepper Salad And Vegan French Toast

I’ve been having some pretty great kitchen luck lately.  You know when you’re just on a roll and everything you make is gold?  Yeah, that good. I’m so in love with maple dijon baked tofu that I made it again yesterday.  For some reason, baked tofu and brown rice is my biggest craving.  I’ll just be going about my normal life and all of the sudden the need for baked tofu with brown rice hits.  That’s normal, right?

Vegan Baking Recipes

For lunch I created this killer cucumber salad with an even more amazing flavor come evening.  I will proudly be toting this dish to potlucks and picnics alike! It’s a little tangy, slightly sweet, and has a kick of spicy heat.  Yum!

Sweet And Spicy Cucumber Pepper Salad
Ingredients:

  • 2 cups diced cucumber
  • 1 cup diced bell pepper- red, orange, and/or yellow
  • 2 tablespoons white vinegar
  • 1 tablespoon agave nectar
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon crushed red pepper flakes

In a medium bowl, combine vinegar, agave nectar, sea salt black pepper, dried basil, and crushed red pepper flakes.  Add in cucumber and peppers and gently stir until well-coated in sauce mixture.  Refrigerate for at least an hour to allow flavors to combine and serve.  Enjoy!

Vegan Salad Recipes

I started off the afternoon by making a loaf of what was meant to be vegan cinnamon raisin bread for another “A Vegan With A Bread Machine” post, but I apparently missed the add fruit beep.  When I walked into the kitchen to check, the loaf was already baking.  Whoops!  With my simply cinnamon homemade bread I decided to make vegan french toast for dinner.   I soaked the bread slices in a mixture of rice milk, flour, sugar, and cinnamon, cooked it in a nice big pan, and topped it off with a sprinkling of powdered sugar and a drizzle of maple syrup.  So delicious!  It was so filling I could only eat 1/2 piece, putting the rest away for tomorrow.

  5. What a great light salad!! I could eat cucumbers all day long! The organic ones are still quite expensive around here though :(
