A Family Vegan Easter Feast

April 4, 2010 by Keri

It feels like it has been such a long day.  Today we cooked a big meal at my mom’s with plenty of vegan dishes to go around.  I think I’ll just post pictures of all of the vegan deliciousness since I’m really tired from all of the food and fun.  The dishes I made were the Yum Yum Cauliflower and the Caramel Pecan Bars Invade Your Cookie Jar.

My eyes were bigger than my stomach; I had to share!

I’m always so grateful that my family turns most of their favorite holiday dishes vegan for us!  After eating and a plastic Easter egg hunt for the kids, my mom gave my husband and me an Easter basket filled with vegan goodies.  She also gave the little guy his own Easter basket filled with vegan goodies, but I guess I forgot to take a picture of that one. Oops!

Since it was such a beautiful day, everyone went out to play after checking out the basket goodies. When it started to get chilly, we came in and colored while watching Monsters, Inc.  It was such a great day filled with family, food, games, and movies!  I hope you all had a great weekend too!

  2. What a feast! How exciting! You didn’t make all of that on your own now did you?! I sure hope not! But you did say you were quite tired… Oh dear! 🙂

Thanks, too, for wishing me a happy veganversary the other day! That really meant a lot!

Talk to you again soon! 🙂

    • Keri says:

No, I didn’t make it all myself. 🙂 I made the cauliflower bake and pecan bars and my mom and grandma made the rest. I did the entire meal at Thanksgiving and Christmas and it’s a lot to do, so I don’t mind passing off a few holidays to my loved ones. Haha! Hope your weekend and veganversary were great! 🙂

Ah a vegan holiday feast would be my dream! I usually cook 2-3 dishes for holidays and my family takes care of the rest 🙂

I love your Easter basket! Especially the beans haha

I love vegan holiday feasts! Thanks, the beans are too cute of my mom. That’s her way of saying well, you don’t eat Cadbury eggs so what do I do?!? 😛

Delicious!! I have had that vegan yum yum dish flagged for awhile, and now I’ll def. have to pull it out and give it a try. Your very lucky to have a family that is so accommodating!

    • Keri says:

You should definitely move it up on the to-bake list; it’s so good! Even my mom’s anti-tofu boyfriend liked it. I am very lucky to have a family that goes out of their way to make the meal vegan for us!! 🙂

    • Keri says:

Yeah, I think that was the problem.. I’d have to break out my maternity jeans if I ate like that all year! 😛
